Babaganush is an Arabic dipping paste prepared from grilled and skinned eggplant. It is traditionally served as a side dish with falafel or shawarma. The spice blend has a sweet oriental aroma and tastes somewhat sour.
Usage:
To make a paste:
Score eggplant several times and then bake or grill until its skin can be easily peeled off (about 30 min at 200 °C). Then peel off the skin, put the flesh in a bowl and add 2 tbsp of sesame seeds. Stir in 1-2 tsp of our spice mixture, add salt and finally some olive oil and lemon juice to taste. Puree the whole thing - done.

Pomegranate seeds, lemon zest, cardamom, cumin, cinnamon, cane sugar, pepper.
