Wat is a traditional Ethiopian spice blend popularly used for the eponymous chicken and beef stews. It is also used for opulent East African pepper sauces. The flavor-defining ingredient is the so-called long pepper, which combines a peppery pungency with a sweet note.
Usage:
Add the mixture to the dish towards the end of preparation. If you like it spicy you can also use the mixture generously.
