Description:
Spice preparation with a light rose aroma for seasoning couscous, bulgur, eggs and stews (tajines). The mixture is also very good for flavouring shakshuka, a tomato-based stew with poached eggs.
Usage:
As a sprinkling seasoning:
After about 5 minutes, the spice mixture unfolds its full aroma. The mixture is spicy, so dose carefully.
As a paste:
Mix the mixture in equal parts with water to form a paste and stir in a little olive oil after about 3 minutes.
Alternatively, grill a pepper, skin it and puree it together with 3 tbsp tomato paste, 3 tbsp olive oil and 1-2 tbsp rose harissa. Add salt to taste and leave to stand for 10 minutes.
