Café de Paris is a spice blend used to prepare a Swiss butter sauce, especially eaten with beef steak. The name comes from a Geneva restaurant. This blend is also popular for preparing herb butter.
Usage:
To make a "Café de Paris" butter sauce:
Mix soft butter, flour and Café de Paris mixture and let it sit for about 10 minutes. Heat cream in a saucepan, then add the prepared "butter cream" and bring to the boil briefly. Finally, add salt as needed - done.
