Using Spices – How to Get the Most Out of Them
Using spices correctly makes all the difference. Here are a few simple tips for everyday use:
- Whole or Ground: Whole spices like peppercorns or caraway seeds keep longer. Grind them just before cooking – that's when they taste most intense. Ground spices are ready to use immediately, but lose their aroma more quickly.
- When to Season?: Hard spices like rosemary or bay leaves can be added from the beginning of cooking. Delicate herbs like chives or basil are added just before serving. This way, their delicate aroma is preserved.
- Dosage: It's best to start with a small amount and then adjust as needed. Be especially careful with hot spices like chili.
- Recognizing Freshness: Good spices are recognizable by their strong aroma. If a sample smells bland or dusty, the spice is old. With us, you get fresh products that fully develop their aroma.
And another tip: Always store your spices in a dark, dry place in tightly sealed containers. Then they will remain aromatic for months.
Spices by Cuisine – Find what suits your dish
Every cuisine in the world has its favorite spices.
To help you find your way around our website more easily, we have compiled the most important spice categories for you. Simply browse the categories that interest you.
Chili – From mild to fiery
Chili comes in many varieties: mild varieties such as Ancho Chili or Habanero or T-Butch. Whether fresh, dried, or as flakes – chili gives dishes the desired spiciness.
Pepper – The all-rounder
Pepper is much more than just black or white. Try green pepper (mild-fruity), red pepper (full-bodied), or smoky Kampot pepper. Each variety has its own character and pairs well with specific dishes. Gewürz Mayer also carries many unusual pepper varieties such as cubeb pepper, Bhutan pepper, or Penja pepper.
Salt – "White Gold"
Whether fine sea salt, coarse Fleur de Sel, or flavored salt with herbs – salt is the foundation of every good kitchen. In our shop, you will find a wide selection of salts from around the world.
Herbs – Freshness for the Kitchen
Whether oregano for pizza, thyme for stews, or dill for fish – herbs are indispensable. All our herbs are residue-tested and gently dried to preserve their aroma.
Paprika – Savory and Mild
Paprika comes in many varieties: sweet paprika (mild, for goulash), rosy hot paprika (for bold flavor), or smoked paprika (for a distinctive aroma). Perfect for Hungarian, Spanish, and Mediterranean dishes.
Asian cuisine thrives on special ingredients. Lemongrass, kaffir lime leaves, galangal, and Thai chilies are typical for Thailand. Sichuan pepper and star anise define Chinese cuisine. And from Japan come sansho pepper and shichimi blends. Our Asian spices bring the Far East into your kitchen. (Indian specialties can be found separately.)
Oriental Spices – Aromas of the Arabian Nights
Cumin, coriander, cinnamon, and cardamom are the foundation of many dishes. Also featured are special varieties like sumac (tangy), black lime (earthy), or smoky Isot chili. With these oriental spices, tajines, couscous, and köfte turn out perfectly.
West Africa brings us the herbaceous-spicy Malaguetta pepper (also known as grains of paradise) and the flavorful Selim pepper. Fenugreek seeds are typical for Ethiopian dishes. Our African spices are for adventurers who want to experience new flavor worlds.
India is the land of spices. Here you will find cumin, coriander seed, turmeric, cardamom, cloves, and many more. Whether for a mild korma or a spicy vindaloo – with our Indian spices, your curry will be authentic. We also offer many ready-made curry blends.
German Cuisine – Hearty Home Cooking
German cuisine has its own classic spices: Marjoram for bratwurst, caraway for sauerkraut, allspice for pot roast, juniper for game dishes. Also bay leaf, cloves, and various pepper varieties – simple and good.
Mediterranean Spices – Sunshine in a Jar
Oregano, thyme, rosemary, sage, and basil – the herbs of the South smell like a vacation. Together with garlic, fennel, and saffron, they create Italian, Greek, or Southern French dishes.
