Description:
To produce sweet paprika, the septums and seeds are removed before the pods are ground. The paprika tastes sweet and full-bodied, although somewhat weaker than the Hungarian spicy paprika. With its high color value of 160 ASTA, it is excellent for coloring soups, stews, sausages and rice dishes.
Usage:
Paprika can be used liberally for both co-cooking and seasoning. The only caution is when sautéing in a pan in oil. In this case, paprika powder can develop a bitter taste due to the high heat.
Known dishes:
Goulash dishes, paprika sausages, chili con carne, Pörkölt, Romesco sauce.
