Description:
Matcha is finely ground green tea and is increasingly being used in cooking. The traditional beverage is whisked with hot water and a matcha whisk to create a frothy tea. This process has been celebrated in Japan for centuries as part of traditional tea ceremonies.
The production of matcha powder is a labor-intensive process. The raw material used is exclusively chlorophyll-rich shade-grown tea, whose fermentation is halted by steaming after picking. The dried and carefully selected tea leaves are then ground using slowly rotating granite mills. It takes a mill at least two hours to produce 100 grams of matcha powder!
Known in Japan for 800 years, this fine powder has become popular in the Western world for making smoothies, as a bitter component in desserts, and for baking.
This Chinese matcha has a strong, spicy tea flavor and is therefore particularly suitable for cooking and baking. Of course, you can also use it to make classic matcha tea.
Usage:
Use the matcha for cooking and baking according to the recipe. To make matcha tea, place 1–2 grams of the powder in a matcha bowl, pour 100 ml of water heated to approximately 80°C over it, and whisk the mixture with a matcha whisk until frothy.
