Our "Mèlange Noir" - pepper blend is a composition of the three pepper varieties Tellicherry pepper, Cubeb pepper and Bengal pepper. The simple blend has a diverse spectrum of aromas, which is due to the charaketristic properties of each ingredient.
Tellicherry pepper is a classic black pepper harvested almost ripe, with intense aroma and pronounced spiciness. Kubeben pepper, originating from Indonesia, contributes a fruity and slightly bitter flavor without being dominant.
The smallest proportion by weight in this blend is the Bengal pepper. Its sweet, earthy and warm aroma immediately rises to the nose and perfectly rounds off the "Mélange Noir" pepper blend.
The pepper blend tastes very good with all heavy, dark sauces and thus fits perfectly with game dishes. The sweetish aroma of the Bengal pepper makes it a good companion for oriental dishes. Due to the coarse grain, it is recommended as a steak pepper for good beef steaks.
The aroma of pepper in general and therefore also this pepper blend is not heat resistant. Because of this, pepper should not be overcooked in braised dishes, for example, as this would cause its fine aroma to be lost.
