Description:
This wild-collected, small relative of the Bengal pepper has a sweet aroma that is distinctly reminiscent of cocoa. The peppery note reaches the taste buds only with a time delay. An ideal companion for dark sauces, game dishes, Mexican mole and also chocolaty desserts.

Usage:
The aroma of pepper is not heat resistant. Because of this, pepper should not be overcooked in braised dishes, for example, as this would cause its fine aroma to be lost. The whole pepper berries can be crushed with a pepper mill or mortar. Due to the sharpness, dose carefully.
