Bitter almonds have a typical aroma of marzipan after processing. They are indispensable ingredient of Dresdner Christstollen and Amarettini.
Usage:
Bitter almonds contain prussic acid, which volatilizes when heated. Therefore, they should always be used well heated. Eating them raw is poisonous. Keep out of reach of children. For some preparations, the almonds are skinned in advance.
