Description:
Blue poppy has a strong, nutty flavor. In Western cuisine, it is used mainly for sprinkling on rolls or, mixed with honey or sugar, as a filling for strudels, yeast dumplings and sweet cakes. Blue poppy seeds can be used as a substitute for white poppy seeds to thicken Indian curries. However, it is very difficult to grind.
Usage:
Depending on the recipe, whole or ground blue poppy seeds can be used for baking. Lightly toast the grains to facilitate grinding.
