Description:
Likouala pepper originates from the virgin forests of the northeastern part of the Republic of Congo. Similar to Voatsiperifery pepper, the fruits grow on slender climbing plants up to 18 meters high. The pepper is collected wild by the Baka people living there and used in particular for seasoning game dishes.
The small grains remind visually and also taste of Kubeben pepper. They have a tart, fruity aroma and a lingering note of eucalyptus. The pepper is excellent with white meats, such as chicken or rabbit, and with floury vegetables, especially pumpkin and sweet potato.
Usage:
Likouala pepper can be cooked uncrushed or ground in advance in a mortar. It also tolerates longer cooking times. When using for the first time, please dose sparingly.
