Description:
Wild jungle pepper from Madagascar! This false pepper grows in the jungle and is hand-picked at heights of up to 20 meters by various village communities. The small harvest volume and the complex extraction make Voatsiperifery pepper a real rarity. The very intensely fragrant fruits have a fruity, resinous taste with a sour pepper aroma somewhat reminiscent of Szechuan pepper or Sansho.
This makes it an excellent accompaniment to tropical stews, fish dishes with coconut milk, and in combination with lemon, salads and grilled fish.
Usage:
The aroma of the pepper is not heat resistant. Because of this, it should not be overcooked in stews, for example, as this will lose its delicate aroma.
The whole pepper berries can be crushed with a pepper mill or mortar.

Fruity-peppery with an acidic note.
