Description:
Our red Phu Quoc pepper is fully ripe harvested berries from Vietnam. The growing area is located on an island directly opposite Kampot, which is appreciated worldwide for its quality pepper. The berries are hand-picked after harvest and sun-dried. Red Phu Quoc pepper does not receive a hot water bath after harvest, which is why the berries turn darker in color during fermentation. The late harvest time gives this pepper a full-bodied, fruity aroma with relatively restrained spiciness.
We recommend using this rarity exclusively for seasoning dishes. The distinct pepper aroma and subtle spiciness harmonize perfectly with short roasted meats, glazed fish, soups and sauces as well as salads of any kind.
Usage:
The aroma of pepper is not heat resistant. Because of this, pepper should not be overcooked in braised dishes, for example, as this would result in the loss of its fine aroma. The whole pepper berries can be crushed with a pepper mill or mortar.
