Our black Kampot pepper is unripe harvested berries from the province of the same name in Cambodia. The berries are grown on sunny plantations and are handpicked after harvest. In contrast to the fully ripe harvested red Kampot pepper, the black variety is characterized by a restrained pepper aroma with a slight spiciness.
Black Kampot pepper is the ideal companion for fish and poultry dishes, as well as light white wine-based sauces.
Usage:
The aroma of the pepper is not heat resistant. Because of this, pepper should not be overcooked in braised dishes, for example, as this would result in the loss of its fine aroma. The whole pepper berries can be crushed with a pepper mill or mortar. Due to the sharpness, dose carefully.
