Orange peels have an orange fragrance and a tart, slightly bitter taste. They are popular in baking and are used primarily in the cuisine of Central China to flavor broths and meat dishes.
The peels are also excellent with dark sauces, such as game. The sweet fruity aroma goes well with pastries, sauces, poultry, game, fish, stocks and soups.
Use two to three knife tips of the ground orange peel per kilogram of dough. One heaping teaspoon of the powder is enough to flavor about 200ml of sauce or stock.
