Rose petals add a unique flavor to desserts in India, North Africa, Kuwait, Iran and Turkey. In India, they are popular for flavoring certain dairy products while in Morocco and Tunisia, they are also used to flavor lamb stews and soups. They are also great for flavoring tea and sugar!
Usage:
The leaves are easy to grind by hand. Use in quantity according to taste.
For flavoring tea 2-3 petals per cup are sufficient. To flavor sugar, mix rose petals and sugar in a 1:10 ratio and let "steep" for at least two weeks.
