Description:
Barberries are a popular ingredient in rice dishes of all kinds throughout the Orient and Central Asia. When combined with saffron and butter, they add fresh acidity to the rich and sweet earthy flavors of the Iranian rice dish Sheresk Polo. Georgia, Armenia and Uzbekistan also have rice dishes that are quite similar (even in name), with ingredients that vary regionally. The ingredients (including dried fruit, eggs, lamb and vegetables) are often cooked in the rice as an intermediate layer.
Similar to cranberries and cranberries, the sour fruits also go excellently with game dishes with fruity-sweet sauces.
Usage:
Barberries are usually added in the last third of the preparation time.
