Kaffir limes are a character spice of Indonesian, Malaysian and especially Thai cuisine. The intense citrus aromas and tangy fresh flavor combine perfectly with creamy coconut milk, as used in Thai curries. The ground peel can be used for all dishes that also otherwise harmonize with lemon flavors. Therefore, kaffir lime is often used for Asian curries and stews with poultry, fish and seafood. Unlike the leaves, kaffir lime peel is also great for making desserts.
Usage:
Use kaffir lime peel a little more cautiously than the leaves. It is more intense and tart than the leaves. Add to the dish in the last third of cooking.
