Description:
Blue Fenugreek is only more important in the regional cuisines of Switzerland and South Tyrol. Its aroma is somewhat reminiscent of fenugreek. In Switzerland, the herb is used in the preparation of a traditional hard cheese and for the dish "Heaven and Earth", also known in this country, which consists of coarsely crushed apples and potatoes.
In South Tyrol, especially in Val Pusteria, Schabzigerklee flavors numerous savory pastry specialties often made with sourdough or rye flour.
Schabzigerklee is excellent with potato dishes, hard and fresh cheeses (including cheese fondue), eggs, salads, as well as traditional bread.
Usage:
Sprinkle the dish with Schabzigerklee just before serving. The leaves can be crushed between the hands.
To make bread or rolls, add about one heaping teaspoon per kilogram of dough to the batter.
