Pointed morels are popular edible mushrooms with a characteristic flavor. They are excellent in sauces, especially for game, ragouts and omelets.
We purchase our morels directly from the collector. They originate from the forests of British Columbia in Canada.
Morels grow in sandy soils and should be briefly rinsed before preparation. Then soak the mushrooms in hot water for at least half an hour, or cook them in liquid. In this process, they gain considerable volume and weight. The "soaking water" also tastes very aromatic and can be used to deglaze sauces and roasts! You should always use mushrooms well heated through.
