Description:
Garlic is one of the oldest cultivated plants. It is appreciated all over the world. In the Mediterranean area there are numerous sauces based on garlic, such as the Spanish aioli or the French rouille. And probably almost no Italian pasta can do without a greater or lesser amount of the aromatic spice.
In India and Thailand, garlic is a component of most curries and masallas. In the Orient, it is popular for vegetable pastes and stews or braises.
Usage:
Use garlic flakes in the same quantity as dried cloves. Five slices correspond approximately to one clove. By cooking them in some liquid they become soft. Also best Suited for pickling in oil.

Aioli, rouille, spaghetti aglio, olio e peperoncino, hummus, babaganush, Thai green curry, bumbu, kimch'i, tapas, pesto, mojo sauce.
