The celery plant yields three spices, very similar in taste but different in use, namely celery root, seed and leaves.
Celery seeds have been somewhat forgotten in the kitchen. Unjustly, because they have a very pronounced celery flavor and can replace the celery root in taste. They are good for marinating meat, stews and soups, as well as Indian tomato-based curries. In northern Europe and Russia, the small seeds are used to prepare soups and broths, pickle vegetables, and flavor cabbage.
Usage:
Add celery seeds to the dish at the beginning or end of preparation. They are very aromatic and should be used sparingly. For seasoning, the powder is more suitable.
