This variety of chile is a standard ingredient in Mexican cooking. Both the unripe green and the ripe red pods are used for seasoning. The latter are slightly hotter. The name "Chipotle" is derived from the processing of the fresh pods. For drying, this specialty is smoked over mesquite wood. This develops a pleasant smoky flavor, which for vegetarian dishes, for example, replaces the cooking of smoked meat. The ground pods soften very quickly in water. It is better to use the powder for seasoning.
